Which Minecraft?
Of course you can play Minecraft with it. However, only one iGPU is installed here. Which is why it will most likely lag heavily. MC may no longer be able to start on newer versions.
With this MacBook Pro you could achieve around 60 FPS with Optifine. But I would not recommend you to buy this because MacBooks are not suitable for gaming. Of course you can play with it but it is not recommended from my point of view.

Buy a Linux or Windows gaming PC. If that is too expensive, I would recommend a more powerful office PC.

If you Really want to gamble with a MacBook, I can recommend the MacBook Pro 2017. With that you would achieve over 100 FPS with Optifine. But if you prefer to build a PC with a GTX 1080 ti, Core i7 7700k, Asus ROG Strix B450-F, 500W power supply and 2 x 8GB RAM modules.
It may well be that it works. But a MacBook is not actually intended for gaming, so I would recommend a Windows PC for gaming.
