A witch just killed me looking for diamonds where I had 31 levels. That really annoyed me, especially because their first potion almost always kills you and then you soon die anyway. Can someone tell me how to deal in such situations so as not to die? And don't come with milk now!

Then you're doing something wrong. The first thing she does is throw a slowness potion. XD
As soon as you notice them, simply with your sword or ax on them. If you do enough damage, she won't stand a chance.
There are not many more options than to do as much damage as quickly as possible, so that the witch only uses defensive potions and no offensive ones (possibly with a bow). And if you are poisoned, it only helps to dig in before the damage potion comes.
Otherwise there's only 'protection' as an enchantment - but you can only reach max. 16% damage reduction against witches. Shields are more of a disadvantage than an advantage for potions.
