240 FPS is perfect and already too much for most monitors. You should only aim for 240 FPS if you also have the appropriate 240HZ monitor.

240fps are better for the latency / input lag with the 144Hz monitor than, for example, 144fps. The only disadvantage with excessive frame rates is increased screen tearing, but FPS enthusiasts won't care.

So 240 FPS is very decent, especially since Minecraft doesn't have particularly high demands on the hardware, especially the GPU and CPU needed.
