How much Ram did you assign to Minecraft?
Make sure you have the 64 bit version of Java installed.
Vanilla? Bukkit / spigot? Forge mods? Latest java runtime + libs installed? Texture packs installed? Shader on it? And much more ^^
Minecraft is the worst optimized game since Crysis in contrast to that, the graphics of Minecraft, however, is extremely bad, which of course is so wanted. But that's no excuse for the poor performance.
When Minecraft was still a community project which was distributed free of charge you could justify it with development effort etc. But since the game costs money this is no longer ok for me.

Minecraft itself runs on a Core 2 Duo liquid, the optimization is grottig, yes, but in the hardware, the game should run smoothly. That works on every toaster.
Minecraft is crazy insane singlecore last, so it runs quite well on older processors, but I've played it myself and the stuff just jerky, even if you have the JavaVM 2GB memory and that should be perfectly adequate for a game of this quality.
Of course, it should not be able to overload the individual components of this system and probably it does not do that most of the time, but somehow the game hald always somehow makes something bad and then jerky. I have no idea what is going on under the hood but apparently certain routines are still not optimized and quasi in a beta state where they need massive resources more than would actually be necessary.
