I have continuously between 200 to 500fps with mc and still the whole feels like a maximum of 40 and is totally superfluous. I really don't check what's going on, I have an r9 390x, 16gb 3000mhz ddr4 and a ryzen 2600.

I recommend everyone who has any performance problems to check for the first time in the task manager under the performance tab whether there's any excessive utilization.
Could be due to your Wi-Fi connection, do a speed test to check it (under 30Mbits \ s it is not very good)
I once had a colleague whom I helped build with the PC.
He then had laggs in LOL even though he had 150+ fps, he was always bent back (if that describes your problem). In the end it turned out that limiting the fps to 60 was the trick. Maybe you should try Minecraft.
The problem is not your FPS but your screen. Your screen I say is 60 or 144hz strong which means it can show 60 or 144 frames per second. 300 are already there double to five times there are one or the other skipped.
So just set a limit like 60 80 100 120 etc choose.
Ram or hard drive is probably too slow, if you have such high fps it sometimes happens that these then cause stutters due to slow working. Then your fps can be at 300fps, but your frametime is still for *****. The golden point for fps is 2 * Hz, so if you have 60 hz, make a fps cap for 120, you can do that with river tuner or nvidias / amds software. I do not recommend Vsync because it increases the input lag.
The images are skipped, but that does not lead to lag and does not have any bad effects, but a limit of fps helps for other reasons.
