I keep having the problem that my FPS suddenly becomes 30-60 FPS lower. I reach a maximum of ~ 530 FPS and a minimum of ~ 350. I set the FPS count to infinity most of the time. But even if I set the FPS to a maximum of 120, it still happens with the sagging. Is there a mod or setting in Optifine that I can use to make my FPS more stable? An extra program would also be fine.

Which texture pack do you use? Your computer may not be able to keep up. Try to install a "simple" texture pack: https://texture-packs.com/de/eigenes-texture-pack-installieren/

Leave the fps at infinity
yes that is normal for Minecraft, in optifine there's the option smooth fps and smooth world for performance, they reduce that. You do not have as much fps with it but stable
optifine also helps a lot.
In addition, allocating more RAM to Minecraft could also help
Turned on these options and it improved a little. Almost always assigned 6GB RAM anyway.
