FPS in Minecraft Limited?

Moin, After a long time I wanted to play Minecraft again and just look how many FPS I can manage. Then I turned down all settings and pressed F3, then I noticed that my FPS are at 75. In the settings, the FPS limit is of course set to Unlimited. Vsync is also off. There's also no limit set in the Amd software. Maybe you know what to do next. Thanks in advance.

Who says you can go over 75 FPS with your computer?

Just check what happens when you turn up the render distance.
If the FPS is going down, then know that your PC is not doing more than 75.

I can turn up the settings completely and drop the FPS. Of course I could play like that, but I didn't spend my money playing at 75 FPS when I was playing at 500+ like a few months ago.

Then you have changed something since 'a few months ago' and 'today' what defines this drop.
