I asked earlier which CPU I should use with a 1660 Super, There were different opinions here. On the one hand the six-core 5 3600 and 2600 and there were also opinions that I should take the four-core 3 3100 and I surfed and found out that the 3 3100 was better than the 5 2600. But I only generally have a budget of around 600 euro for the gaming PC. My focus would be Minecraft with shaders and possibly texture packs. I also want to be able to play Rocket League and LoL smoothly.
These are all games that are more likely to be optimized for 4 cores, but a 6 core is still more future-proof
I would recommend the Ryzen 5 3600 or 2600X, 6 cores are simply more future-proof and the CPUs are really very reliable.
I myself use a Ryzen 5 2600X with an RX 580, very happy with the configuration
If you don't expand your portfolio of games, then you'll be happier with the 4-core. But 6 cores are more future-proof. In addition, the 1660S is not exactly the most potent card.
I would make the question dependent on whether you want to upgrade the GPU later. Should you decide on a 6-core, I would wait a little longer and see if you can dust off a 5600X. If you upgrade later, you have future-proof hardware.
