I always have over 200 fps in minecraft but it feels a bit laggy and not smooth at all

Limit your FPS to 150 or keep an FPS number that is not undercut.

But it can also be because of your screen that it only appears to you because your screen has too little Hz.

Take a picture and watch it. If so, the shot should look smooth
