One could simply increase the chance for mobdrops such as tantrums etc. In the code. Or set that there should already be 4 eyes in the portal.

How do you check whether you are cheating on such speed runs? In the video proof you have to do you do not see the code of the game. You could try If you do it discreetly, you may not notice it, if you make it too obvious, you will.
The people who run these games are experienced speedrunners themselves, so they know what is realistic.
