I can hardly choose between the Ryzen 5 3600 and the Ryzen 7 2700 (possibly also the X versions).
The only thing that speaks for me for the Ryzen 7 are only the 2 cores more.
Otherwise the Ryzen 5 is a little better and I had actually focused on it from the start.

I mostly gamble on my PC now and then (once a month) I also stream. I have also planned to stream more often and I want to start with YouTube (or video editing).
I'm currently playing Assassins Creed Origin, Minecraft, Gta 5 and in the middle of Novembar I want to play Assassins Creed Origins.
I would only play on full HD.
If you want to do streaming and yt, I recommend the 2700. The 2 cores make no small difference
The games you have enumerated are more likely to benefit from the Ryzen 5 3600 and its additional performance.
Steeamen, video editing and co. Benefit from the Ryzen 7 2700 and its 2 cores.
I would recommend saving some money and buying the Ryzen 7 3700X.

I don't know how big the difference between the two CPUs when streaming is, but at least when gaming, it is definitely worth more to go with a Ryzen 5 3600, UserBenchmark said that the Ryzen 5 had 11% more gaming performance.
So I would go with the Ryzen 5 but do not know how much the 2 cores bring more when streaming.
Yes i know that the ryzen 5 is 10% better and has, e.g. In AC Odyssey, even 10-12 fps more. But it is a difficult decision since the r5 only costs 9 euro more, but the r7 has 2 cores more.
You also wrote that you only stream once a month so you will probably be happier with a Ryzen 5.
Take the 3600. It only has 6 cores, but one core has more power than that of the 2700. For streaming, that's enough.
In November you will be able to grab the Ryzen 5 3600 quite cheaply. This is far superior to the Ryzen 7 2700 in gaming. It is also sufficient for streaming and video editing.
The r7 has a poorer single core performance, so the other one costs 9 euro more
